Spicy Deviled Eggs

For classic deviled eggs, the eggs are hard-boiled and filled with a creamy yolk flavored with mayonnaise and mustard, but there are lots of ways to make deviled eggs your own. Sweet pickle relish is a must-have mix-in for deviled eggs in the South, but if you’re looking for a deviled egg with heat, this is the recipe for you. 

In my search for the perfect spicy deviled egg, I’ve experimented with an array of hot sauces, spices, and chiles. Pickled jalapeños give deviled eggs a bite like nothing else, and that’s why I’ll never make spicy deviled eggs without them.

  • Eggs: Older eggs are easier to peel. You might not see much difference in dates between cartons of eggs from the supermarket, but if you’re lucky enough to source eggs from the farmers market or your backyard, let them sit in your fridge for a week before boiling and peeling your eggs.
  • Mayonnaise: Adds a tangy flavor and velvety texture to the egg yolk filling.
  • Pickled jalapeños: Finely chop pickled jalapeños to the consistency of relish to add heat and crunch. A dash of the brine adds a vinegary zip and makes the filling a little looser and easier to portion.

How to Make Spicy Deviled Eggs

  1. Boil the eggs. Cover the eggs with cool water and bring to a boil. Remove from the heat, cover, and let sit for 10 minutes. Drain the eggs and transfer to an ice bath to cool, then peel and halve the eggs.
  2. Make the filling. Finely mash the egg yolks, then stir in mayonnaise, chopped pickled jalapeños and brine, kosher salt, and black pepper.
  3. Assemble and serve. Transfer the filling to a piping bag and pipe the filling into the egg yolks (or just use a spoon instead). Garnish with cayenne pepper and serve.
